| Abstract: | The structure,function,production strains and biosynthesis of the novel exopolysaccharide—gellan gum and gellan-related polysaccharides were summarized.Based on their functions,the application of the new exopolysaccharide in some fields at present was introduced.And some problems and the prospects in the process of exopolysaccharide production were proposed. |
