食用豚鼠肉营养价值分析

摘    要:测定了食用豚鼠肉各营养成份的含量。结果表明:豚鼠肉胴体率为66.5%,净肉率为48.3%。每100g豚鼠肉含有水份75.1%,粗蛋白18.3%,粗脂肪1.8%,灰分0.9%。每100g豚鼠肉18种氨基酸的含量在0.14~3.73g之间,氨基酸总量、必需氨基酸总量、必需氨基酸占氨基酸总量比例、鲜味氨基酸含量及鲜味氨基酸占氨基酸总量比例分别为18.27g、6.94g、37.99%、5.29g和28.95%。每1kg豚鼠肉中钙、铁、锌和硒的含量分别为1 208mg、10mg、16mg和0.15mg。

Abstract:The contents of nutrients in guinea pig meat are tested.The results show that the dressing percentage is 66.5% and lean neat percentage is 48.3%.Every 100 g of guinea pig meat contains the materials as followed:75.1% water,18.3% crude protein,1.8% crude fat and 0.9% ash.The concentration of 18 kinds of AA in every 100 g meat is from 0.14 to 3.73 g. The gross amount of AA,EAA,and tasty AA,the percentage of EAA and tasty AA in AA are 18.27 g,6.94 g,5.29 g,37.99% and 28.95%,respectively.There are 1 208 mg Ca, 10 mg Fe,16 mg Zn and 0.15 mg Se in 1 kg of guinea pig meat.
