| Abstract: | The composition of sunflower (Helianthus annuus) seed heads was investigated. High amounts of lignin (12%) were found while glycosides comprised a minor component of the plant material. Lipids were isolated and a total sterol content of 1.05% was found. A protein content of 12.5% was also found. Acid hydrolysis of the plant material showed the presence of combined galacturonic acid (8%), galactose (3.4%), glucose (1.7%), arabinose (0.63%), xylose (0.7%) and rhamnose (21%). The factors influencing the extraction of pectin (11.85%) were studied. |
