摘    要:目的]筛选出山杏仁油的最优抗氧化剂及最适添加剂量。方法]采用Schaal烘箱法,考察TBHQ、PG、VE、茶多酚对山杏仁油的抗氧化性能。结果]TBHQ和茶多酚的最适添加剂量分别为150、200mg/kg。结论]TBHQ和茶多酚对山杏仁油都具有良好的抗氧化活性。

Abstract:Objective] The research aimed to filter the best anti-oxidation and the optimum quantity for apricot kernel oil.Method] Schaal oven method was adopted to study the effect of TBHQ,PG,VE and tea polyphenols anti-oxidation of bitter apricot kernel oil.Result] The optimum quantity of TBHQ and tea-polyphenols were 150 mg/kg and 200 mg/kg,resp.Conclusion] Both TBHQ and tea-polyphenols have favorable antioxidant activity.
