烤烟烟叶碳氮平衡与感官质量关系分析

摘    要:为了探索烟叶内在化学成分碳氮的平衡与感官质量之间的关系,以烤烟上、中、下3个部位,全国6大产烟区域的样品,包括云南、贵州、四川、福建、湖南和安徽,运用数理统计方法对烟叶碳氮平衡与感官质量之间进行分析。结果表明,烟叶两糖与氨基酸总量的比值、烟碱与氨基酸总量的比值、总氮与氨基酸总量的比值对感官香气质、余味、甜度、劲头、浓度有较大影响,而烟叶中总碳与总氮的比值对烟叶感官质量影响不明显。因此,在烟叶配方设计或原料选择时,可以考虑原料或叶组中化学成分间的相互平衡。

Abstract:In order to explore the relationship between sensor quality and C/N balance in flue-cured tobacco, samples of flue-cured tobacco from different parts were collected from six main tobacco plantation areas in China, including Yunnan, Guizhou, Sichuan, Fujian, Hunan, and Anhui provinces. The proper statistical methods were used for analyzing these samples. The results indicated that the sensor quality indexes including aroma quality, aftertaste, sweetness, physiological strength and concentration were influenced by ts/ta, rs/ta and nic/ta obviously. So we could use the C/N balance or other chemical components balance to design the formula and select the raw materials.
