菠萝果实膳食纤维的研究

摘    要:以巴厘为试材,测定了菠萝果实不同发育阶段总膳食纤维(TDF)、不溶性膳食纤维(IDF)、水溶性膳食纤维(SDF)、中性洗涤剂纤维(NDF)、酸性洗涤剂纤维(ADF)、纤维素(CEL)、半纤维素(HC)、酸性洗涤木质素(ADL)、总果胶(TP)、原果胶(Protopectin)和水溶性果胶(WSP)的含量,总结了巴厘果实不同发育阶段膳食纤维的变化情况。结果表明,巴厘在不同发育阶段均富含TDF;IDF、NDF、ADF、CEL含量变化与TDF相似,均呈先上升后下降的变化趋势,ADL含量较少,果胶物质均随着果实发育成熟含量下降。菠萝是开发膳食纤维的良好资源。

Abstract:TDF,IDF,SDF,CEL,NDF,ADF,HC,TP,protopectin and WSP contents were determined at different developmental stages in the pulp of Comte de paris.The results showed that the more contents of dietary fibers was in the pulp of Comte de paris,IDF,NDF,ADF,CEL changed in the growth or decline period.along with TDF.The contents of ADL were low in quantity.The contents of protopectin declined with the development of the fruits.The pineapple can be very nice materials for dietary fibers food.
