摘    要:商品肉猪安全卫生监督的有效实行是保障动物健康及动物产品质量安全和公共卫生安全所必须的重要措施.随着对肉食品安全重视程度的提高和相关技术的进步,近几年来,猪肉安全卫生监督技术水平有了很大提升.实践证明,通过病原学监测和血清学监测手段的实施,产销联建监督、远程诊疗与流通监控模式的运行,生猪产销联建、动物卫生可追溯系统及屠宰猪肉的二分体激光灼刻检疫标识系统建设与应用,肉猪安全卫生监督工作水平得到有效地提升.根据笔者多年的应用实践,对现代安全卫生监督关键技术应用包括疫病监测、流通监控与可追溯、产销联检、屠宰检疫等技术等进行总结,以期更好地宣传和推广.

Application and demonstration of key technologies of safety and sanitation supervision of commercial porker in Guangdong
Abstract:The effective implementation of safety and sanitation supervision of commercial porker is necessary and important to ensure the animal healthy, safety of animal products quality and public health security. In recent years, the technologies of safety and sanitation supervision of pork have improved greatly with the emphasis on safety of fleshy food and the advancement of related technologies. The results shows that by the implementation of pathogenic and serological monitoring tools, production and marketing joint construction supervision, the operation of remote clinics and circulation monitoring mode and the production and marketing joint construction of the pig, traceability system of animal health and the construction and application dyad laser engraved quarantine marking system of pig slaughter, The level of safety and health supervision pigs has effectively enhanced. This paper according to author''s years of experience in application practice summarized the application of modern safety and sanitation supervision including epidemic monitoring, circulation monitoring and traceability, production and marketing of the joint inspection and slaughter quarantine technologies.
