热带大蕉采后系列研究

摘    要:通过比较试验研究了大蕉采后呼吸强度、催熟、护色及果酱加工的表现。结果表明,同期采收、成熟度一致的大蕉呼吸强度变化不大;催熟以乙烯利涂果柄法效果最佳,成熟度为83.8%;熏硫法和浸酸法护色各有优劣,可根据加工工艺需要确定适宜的方法;果酱以复合加工效果较好,大蕉与西红柿是较佳组合,其次是大蕉与胡萝卜。

Abstract:The changes of respiratory intensity,ripening,natural color preserving and jam processing in postharvest plantain were studied by comparison experiment.The results showed that changes of respiratory intensity had little difference in plantains sampled on the same date with accordant maturity.The ripening effect of besmearing pedicel with florel was the best with the maturity of 83.8%.Both the sulfuring method and the pickling method for preserving natural color had their advantages and disadvantages respectively and the optimum method could be ascertained according to the processing technology.The combined processing method of jam had the better effect.The preferable combination was plantain and tomato,followed by plantain and carrot.
