| 摘 要： | 本试验应用色差计对7个不同颜色辣椒品种青果期、转色期和成熟期的色泽变化进行检测,同时对同一份样品进行感观检验和薄层层析分析。结果表明,色泽参数中的色度角〔H=tan-1（b/a）〕、色泽比（h=a/b）能反应辣椒果实发育过程中色泽的变化;色差计检测辣椒果实颜色可行,其具有操作简单、成本低、时间短、无损伤等特点。

| Abstract: | In this study, the fruit color of seven hot pepper cultivars was tested with colorimeter, TLC and experienced eyes respectively from green to ripe fruit stages. The results showed that there was the relationship between colour parameters H as well as h and color change during the development of hot pepper fruit. It is feasible, simple, cost-saving, time-saving and harmless to measure color of hot pepper fruit with colorimeter. |
