紫玉米色素的提取工艺及产品稳定性研究

摘    要:以紫玉米为原料提取紫玉米色素,并对产品稳定性进行研究。通过单因素试验,确定各工艺参数对紫玉米色素提取率的影响;选择提取温度、提取时间和料液比3个因素进行正交试验设计,对紫玉米色素的提取工艺进行优化。试验结果表明:影响紫玉米色素提取率的因素主次顺序为提取温度>提取时间>料液比;以80%乙醇与0.2mol/L柠檬酸混合溶液为提取剂,最佳工艺条件为提取温度60℃、提取时间2h、料液比1:10。

Abstract:Purple corn pigment is extracted from purple corn,and its stability is studied.By single-factor test the effect of various process parameters on the purple corn pigment extraction rate is determined.Orthogonal experiment is designed selecting three factors,namely,the extraction temperature,extraction time,solid-liquid ratio.The purple corn pigment extraction process was optimized.The results show that the selected three factors affecting the size of purple corn pigment extraction rate of primary and secondary order:for the extraction temperature;extraction time;solid-liquid ratio,the optimum conditions were:80% ethanol and 0.2 mol /L citric acid mixture as the extracting agent,and the extraction temperature was 60 ℃,and the extraction time was 2 h and the ratio of material to solvent was 1:10.
