摘    要:目的]为延长樱桃的保鲜时间,制得优良的樱桃保鲜剂。方法]采用固-液反应法制备了巯基化壳聚糖及它们的金属离子配合物,并以壳聚糖的改性材料配制成樱桃保鲜剂,通过对樱桃损耗率、可溶性固形物、可滴定酸、VC含量、呼吸强度的测定研究了不同浓度保鲜剂对樱桃的保鲜效果。结果]用壳聚糖制备的保鲜剂能有效地延长樱桃的贮藏期,降低贮藏期间樱桃果实的损耗,减缓樱桃可溶性固形物、可滴定酸、VC含量的下降,还能减弱樱桃的新陈代谢。巯基化壳聚糖对于樱桃涂膜保鲜的最优浓度是10 g/L,其保鲜效果在21 d以上;添加金属离子制得的复合保鲜液对樱桃能起到更好的保鲜效果。结论]巯基化壳聚糖及其金属离子复合物可作为保鲜剂用于樱桃的保鲜。

Study on the Application of Modified Chitosan in Cherry Preservation

Abstract:Objective] The aim was to prolong the preservation period of cherry so as to obtain a good cherry preservative.Method] The sulfhydryl chitosan and its metal ion complexes were prepared with solid-liquid reaction,and the cherry preservative was prepared by modified chitosan materials.The preservation effects of different concentrations of preservatives were studied according to the loss rate of cherries,the content of soluble solids,titratable acid and VC,and respiratory intensity.Result] The preservative prepared with chitosan effectively prolonged the storage period,reduce the losses,decrease the contents of soluble solids,titritable acid and VC,and weaken the metabolism of cherries.The best concentration of sulfhydryl chitosan for cherry preservation was 10 g/L,its preservation effect could be maintained for at least 21 days,the addition of metals in the preservative could achieve better preservation effects.Conclusion] The sulfhydryl chitosan and its metal compounds can be used for the preservation of cherries.
