摘    要:目的]以林蛙皮为原料,利用木瓜蛋白酶水解法制备活性肽。方法]选取固液比、酶用量、pH、水解时间和水解温度为影响因素,以活性肽的水解度为考察指标,通过单因素试验和正交试验优选木瓜蛋白酶酶解林蛙皮制备活性肽的最佳工艺条件。结果]最优工艺条件为固液比1∶4,酶用量14 000 U/g,pH 7.0,水解温度55℃,水解时间4 h。结论]该研究为林蛙资源的综合利用提供了新的途径。

Study on the Preparation Technology of Active Peptides by Hydrolysis from Skin of Rana chensinensis with Papain

Abstract:Objective] The aim was to prepare active peptides by hydrolysis from skin of Rana chensinensis with papain.Method] Solid-liquid ratio,enzyme dosage,pH value,extraction time and extraction temperature were selected as influence factors,and single factor experiment and orthogonal experiment adopted to optimize the preparation technology with the degree of hydrolysis as evaluation value.Result] The results showed that the optimum conditions were as follows: solid-liquid ratio 1∶4,enzyme dosage 14 000 U/g,pH value 7.0,extraction temperature 55 ℃,extraction time 4 h.Conclusion] The study provides a new way for the comprehensive utilization of resources of R.chensinensis.
