| Abstract: | An experiment was conducted to study the effects of different extraction solvents and extraction time on the extraction of anthocyanin from Physocarpus opulifolius 'Diabolo'.The optimal extraction conditions were obtained as methanol containing 1% HCl and extraction time 3-4 h.Moreover,the stability of anthocyanin was also studied under different pH,temperature and light intensity conditions.Results showed that pH value had an obvious effect on the stability of anthocyanin from P.opulifolius 'Diabolo'.The d... |
