摘    要:概述了姜黄色素的化学组成,重点阐述了姜黄色素清除自由基、增强抗氧化生物酶活性等生物活性和姜黄色素抗氧化机理的研究进展,并对姜黄色素抗氧化产品的开发前景进行了展望。

Abstract:The chemical compositions of curcumin were summarized,the research progresses in the bioactivities of curcumin such as scavenging free radical and strengthening the activity of antioxidant enzymes,as well as its antioxidant mechanism were expounded.The developmental prospects of curcumin-antioxidant products were discussed.
