摘    要:对晒红烟晒制过程中的主要化学成分含量变化进行了研究.结果表明,晒制过程中烟叶失水速率呈现前期慢后期快的变化趋势,总氮和烟碱变化不大,淀粉在晒制前2 d大量降解,之后基本无变化,总糖持续下降,硝酸盐含量逐渐下降,亚硝酸盐含量晒制前期升高,后期降低.

Abstract:The changes of main chemical components of dark sun-cured tobacco during curing process were studied. The result showed that the ratio of water loss in tobacco leaves was low in the first 8 days, and then increased. The content of total nitrogen and nicotine had little change. The starch was decomposed sharply in the first 2 days and then changed very little. The content of total sugar decreased continuously with the advance of curing process. The content of NO3^- decreased during curing process while that of NO2^- increased in the first 6 - 8 days and then decreased.
