摘    要:石榴籽油富含多不饱和共轭脂肪酸,具有极好的营养价值和药用价值。本文对石榴籽油的化学成分、提取工艺及生理功能进行了综述。通过比较发现,不同提取方法对石榴籽油提取率有较大影响;石榴籽油的主要脂肪酸是石榴酸,具有延缓衰老、预防动脉粥样硬化和减缓癌变进程等作用。此外,石榴籽油及其提取物还具有较好的抗氧化、防治乳腺癌、降血糖、抗腹泻等作用。本文为石榴籽资源在食品、医药及化妆品领域中的进一步开发利用提供了理论依据。

Abstract:Pomegranate seed oil is rich in polyunsaturated conjugated fatty acids,which has excellent nutritional value and medicinal value.This article reviewed the chemical components,extraction technology,and physiological functions of pomegranate seed oil.Through comparative analysis,it is found that different extraction methods have a greater impact on the extraction rate of pomegranate seed oil.The main fatty acid of pomegranate seed oil is punicic acid,which has the effects of delaying aging,preventing atherosclerosis and slowing down the process of cancer.In addition,pomegranate seed oil and its extracts also have good anti-oxidation,prevention and treatment of breast cancer,lowering blood sugar,and anti-diarrhea.This article provided a theoretical basis for the further development and utilization of pomegranate seed resources in the fields of food,medicine and cosmetics.
