红果树果实营养成分特征研究

摘    要:红果树是蔷薇科的乔木树种,主要分布在云南、广西、贵州、四川、江西、福建等地。为了进一步开发利用野生果树资源,对采自于江西遂川县七岭的红果树果实中各种营养成分进行了测定与比较分析。测定结果表明:其果实中富含钾元素,钾含量达5.207 1 mg/g;其果实富含镁元素,镁含量达0.725 8 mg/g;其果实富含锌元素,锌含量达0.015 mg/g;其果实中的β-胡萝卜素含量较高,为0.015 13 mg/g;其果实中的蛋白质(0.029 8 mg/g)、脂肪(0.023 mg/g)、钙(0.952 1 mg/g)、Vc(0.003 mg/g)等成分含量也比较丰富;红果树成熟果实的水分含量为0.737 mg/g,高于锥栗和板栗,适宜食用或加工。这些特点说明了,红果树果实具有突出的功能性成分特点,其营养价值较高。

Study on the characteristics of nutritional component contents in Stranvaesia davidiana fruits
Abstract:Stranvaesia davidiana is a Rosaceae tree specie and mainly distributes in Yunnan, Guangxi, Guizhou, Sichuan, Jiangxi, Fujian, and so on. Contents of nutrient components inS. davidiana fruits from Qiling of Suichuan County were determined, compared and analyzed for development and utilization of the wild fruit tree resources. The results showed that S. davidianafruits were rich in K, Mg, Zn, and β-carotene and the contents were 5.207 1, 0.725 8, 0.015, 0.015 13 mg/g, respectively. In addition, proteins, fat, Ca and Vc contents were richer, and they were 0.029 8, 0.023, 0.952 1, 0.003 mg/g, respectively. Water content in matureS. davidianafruits was 0.737 mg/g, which was higher than those inCastanea henryi orC. mollissimanuts, so it was suitable for edible or processing. Based on these characters, it was considered that S. davidiana fruit had the prominent feature of the functional components and higher nutritive value.
