摘    要:为探讨覆土中硒对双孢蘑菇(Agaricus bisporus)子实体产量与品质的影响,采用在覆土中添加亚硒酸钠的方法,进行双孢蘑菇的栽培试验,测定了不同硒浓度处理下双孢蘑菇产量、子实体外观性状、主要营养成分和硒含量。结果表明,覆土中添加0.15 mg·kg-1~0.60 mg·kg-1浓度的亚硒酸钠可显著提高覆土中有效态硒与总硒含量,同时可提高双孢蘑菇子实体产量、有机硒与蛋白质含量及子实体紧实度,而对子实体的粗脂肪、粗纤维、粗多糖、碳水化合物和氨基酸含量无明显影响。试验结果为富硒双孢蘑菇的生产提供了理论依据。

Abstract:In order to investigate the effect of selenium content in casing on the yield and quality of fruiting body of Agaricus bisporus, an experiment was conducted to cultivate A. bisporus using soils artificially added with sodium selenite as casing materials. Fruiting bodies of A. bisporus from different treatments with various concentration of selenium were accounted for their yields, and their morphological characters, contents of main nutrient components and selenium were determined. The results showed that addition to casing of sodium selenite at the concentration of 0.15 mg·kg-1-0.60 mg·kg-1 caused significant increase in the contents of effective selenium and total selenium in casing, and simultaneously caused promotion of the fruiting body of A. bisporus on its yield, contents of organic selenium and protein, and bulk density. While it had no obvious effects on the contents of crude fat, crude fiber, crude sugar, carbohydrate and amino acid in their fruiting bodies. The results provided a basis for the production of selenium-rich A. bisporus.
