乳酸菌发酵制备沙果渣可溶性膳食纤维的工艺研究

摘    要:以沙果渣为主要原料,利用保加利亚乳酸杆菌与嗜热链球菌1∶1混合菌种,研究以微生物发酵法制备沙果渣可溶性膳食纤维(SDF)的最佳工艺参数。通过单因素试验,探讨了接种量、发酵时间、发酵温度等因素对发酵工艺的影响,利用正交试验对SDF的制备工艺进行优化。结果表明:该法制备沙果渣SDF的最佳工艺条件为:接种量10%,发酵时间25h,发酵温度40℃。在该条件下沙果渣SDF的平均得率可达到9.72%,高于非发酵条件下5.44%的SDF得率。

Abstract:Malusasiatica pomace as the main raw material,together with a mixture of Bulgarian L.bulgaricus and Str. Themophilus (1∶1)as the fermentation starter,the technology of extracting soluble dietary fiber(SDF)was studied by microbe fermentation. The effects of inoculating volume,fermentation temperature and fermentation time on the SDF yield were explored by single factor experiments. The SDF extracting technology conditions were optimized through orthogonal experiment. The results showed that the optimal condition of extracting SDF was as follows: inoculating volume 10%,fermentation time 25 hours,fermentation temperature 40 ℃. The average SDF yield of fermentation method which reached 9.72% under the optimal condition was higher than that of nonfermentation method which was only 5.44%.
