小麦品质的麦谷蛋白亚基评定标准研究

摘    要:测定了233份小麦面粉样品的高分子量谷蛋白亚基(HMW-GS)含量、Zeleny-沉降值和谷蛋白大聚体(GMP)含量,并根据SDS-PAGE结果计算了其Payne亚基品质评分.结果表明,不同HMW-GS含量差异显著,不同HMW-GS所对应品种的HMW谷蛋白总量、沉降值、GMP含量、Payne品质评分平均值也存在显著差异,说明不同亚基对品质的影响存在显著差异.HMW谷

Abstract:Content of high-molecular-weight glutenin subunits (HMW-GS) of 233 wheat flour samples was analyzed, together with their Zeleny sedimentation value, flour glutenin macropolymer (GMP) content and Payne quality score. Significant differences were observed between different HMW-GSs content, as well as total HMW glutenin content, sedimentation value, flour GMP content and Payne quality score, which indicated that different HMW-GSs had different effects on wheat quality significantly. Payne quality score was correlated with total HMW glutenin content, Zeleny sedimentation value and GMP content ( r =0.8244 *** , 0.8675 *** , and 0.7984 *** , respectively). Chinese wheats possessed HMW-GS with different effect on quality from other countries, Payne quality scoring system was adjusted based on Chinese wheat GMP content for its relationship with breadmaking quality more significantly than other quality parameters.
