蚌埠市叶菜类蔬菜硝酸盐含量检测及安全风险评估

摘    要:对蚌埠市叶菜类蔬菜硝酸盐的含量进行了检测和评价。于2010年4月采集了蚌埠市小蚌埠乡和吴小街乡2个蔬菜生产基地6个品种27份蔬菜样品及4个主要菜场的12个品种48份蔬菜样品,采用紫外分光光度法分析了其中硝酸盐的含量。研究结果表明:(1)2个乡镇叶菜类蔬菜硝酸盐含量有共性,小青菜硝酸盐含量超标,菠菜、葱、生菜全部符合标准,菠菜硝酸盐含量最低;(2)市售叶菜类蔬菜中硝酸盐污染程度较重的白菜和芹菜,葱、生菜、乌白菜、韭菜、包菜、苋菜、菠菜和茼蒿的硝酸盐含量都较低,均值都在3000mg/kg以下,符合国家蔬菜硝酸盐含量限值标准。其中韭菜、包菜、菠菜的硝酸盐含量普遍较低,均值都低于785mg/kg,达到适于盐渍与熟食的二级标准。
