| 摘 要： | 目的]研究碱法萃取黄瓜籽多糖最佳萃取工艺。方法]以黄瓜籽粉为原料,采用碱法萃取黄瓜籽粉中多糖和黏多糖。通过单因素试验研究萃取液浓度、萃取温度、萃取时间和液料比4个因素对黄瓜籽多糖萃取的影响,通过正交试验优化碱法萃取黄瓜籽多糖的工艺条件。结果]单因素试验表明,最佳萃取液浓度为1.0 mol/L,最佳萃取温度为60℃,最佳萃取时间为1 h,最佳液料比为30 ml/g。正交试验表明,4个因素对黄瓜籽多糖的影响依次为：萃取液浓度〉萃取时间〉萃取温度〉料液比;碱法萃取黄瓜籽多糖的最佳工艺是：萃取液浓度为0.5 mol/L,萃取温度为40℃,液料比为20 ml/g,萃取时间为1 h,在此条件下测定黄瓜籽中多糖含量为5.67%。结论]该研究为黄瓜籽的开发利用开辟了一个新的途径。
