北京大型超市马铃薯制品市场调查分析及对策建议

摘    要:为了解马铃薯及其制品的市场情况,通过对北京12家大型商超马铃薯制品的产品形式、品种品牌、价位区间、加工方式等进行调研,以期为我国马铃薯产品工艺开发及深加工方式延展提供参考和建议。调研结果表明,传统休闲食品加工产业仍是重要的马铃薯加工转化渠道,油炸及膨化食品占比最高,是马铃薯加工和消费的主流形式。其中,油炸/膨化薯片和薯条占比分别为43%和23%;生鲜马铃薯占比10%、马铃薯淀粉占比8%,速冻薯条6%,表明传统马铃薯加工和消费形式在我国城市居民饮食习惯中仍占有重要席位。薯泥、挂面、粉丝、粉条因工艺成熟、替代性较高,市场占比较小。伴随现代食品加工技术不断创新和发展,符合国人消费习惯的方便米饭、火锅、中式菜肴等产品占比也逐渐突出,马铃薯加工市场呈现多元化发展态势。

Market Investigation and Suggestions of Potato Products in Beijing Supermarkets

Abstract:In order to investigate the market situation of potato and related products, 12 supermarkets in Beijing were investigated, including the product classifications, brands, price fluctuation and processing methods of potato and potato products. The research was aimed to provide references and suggestions for the technological development of potato products and the extension of further processing methods in China. The results showed that the traditional snack food processing industry was still an important channel for potato processing and transformation. Fried and puffed food accounted for the highest proportion and were the main forms of potato processing and consumption. Fried (or puffed) potato chips and French fries accounted for 43% and 23% respectively. Fresh potato accounted for 10%, potato starch accounted for 8%, and quick-frozen potato chips accounted for 6%. The proportion of these products was relatively high, indicating that traditional potato processing and consumption forms still occupy an important position in the dietary habits of urban residents in China. Due to mature processing technology and high substitution, the market share of mashed potatoes, noodles and vermicelli is relatively small. With the continuous innovation and development of modern food processing technology, the proportion of convenient rice, hot pot, Chinese cuisine and other products which are according with traditional consumption habits of Chinese people, is also gradually prominent in Beijing supermarkets. Therefore the development of potato processing markets will appear diversification and individuation in near future.
