5种花茶清除亚硝酸钠和抑制亚硝胺合成的效果分析

摘    要:以康乃馨、月季、迷迭香、玫瑰、红巧梅5种市售花茶为原料,在体外模拟胃液(pH 3.0,37℃)条件下,测定5种花茶20 mg/mL的浸泡液清除亚硝酸钠及抑制亚硝胺合成的能力,并与维生素C进行比较.结果显示,月季和玫瑰花茶浸泡液的亚硝酸钠清除和亚硝胺合成抑制效果强于其他几种花茶,其最大亚硝酸钠清除率分别为94.00%和92.71%,最大亚硝胺合成抑制率分别为83.81%和87.89%,红巧梅浸泡液的亚硝酸钠清除和亚硝胺合成抑制效果在5种花茶中最差.10 mL 20 mg/mL月季或玫瑰花茶浸泡液对亚硝酸钠的清除效果相当于12.0 mg维生素C,6.0 mL 20 mg/mL月季花茶浸泡液或10.0 mL 20 mg/mL玫瑰花茶浸泡液对亚硝胺合成的抑制效果相当于12.0 mg维生素C.

Abstract:The in vitro nitrite scavenging and nitrosamine synthesis restraining ability of 5 kinds of scented tea,carnation,China rose,rosemary,rose and Gomphrena globosa under pH 3.0,37 ℃ was tested and compared with vitamin C.The results showed that the nitrite scavenging ability of China rose and rose soak solvent was 94.00% and 92.71%;while the nitrosamine synthesis restraining ability was 83.81% and 87.89%,respectively,which was higher than the other kinds of scented tea.The nitrite scavenging and nitrosamine synthesis restraining ability of G.globosa soak solvent was the worst.The nitrite scavenging ability of 10 mL 20 mg / mL soak solvent of China rose and rose was equivalent to that of 12.0 mg vitamin C.And nitrosamine synthesis restraining ability of 6.0 mL 20 mg / mL China rose soak solvent or 10.0 mL 20 mg / mL rose soak solvent was equivalent to that of 12.0 mg vitamin C.
