摘    要:对不同贮藏条件下,对赛买提杏果实的呼吸强度、多酚氧化酶和果胶酶活性的动态变化与同期果实的可溶性固形物含量、VC含量、硬度的变化进行了研究,研究表明:当果实的呼吸强度变化剧烈时,加速糖、酸等物质水解,引起可溶性固形物含量呈现高峰变化,相反果实的呼吸强度较低时,果实内部的可溶性固形物含量变化也较小;果实褐变和多酚氧化酶的活性相关,但机械损伤会加剧多酚氧化酶活性的变化,因此降低果实表面的损伤度可有效降低果实褐变现象的发生.

Abstract:The article studied the changes of respiration intensity,polyphenol oxidase activity,polygalacturonase activity,and soluble solid conten,vitamin C content,firmness in the different storages of"Saimaiti"apricot.The result turned out that dramatic change in respiration intensity of fruit could accelerate sugar,acid and other substances to hydrolyze,and caused soluble solids content change in the peak.On the contrary respiration intensity of fruit was lower,soluble solids content would change a little.There were some relations between fruit browning and polyphenol oxidase activity,polyphenol oxidase activity changes would be increased by mechanical damage,so reduction of the degree of damage of the fruit surface could reduce the occurrence of the phenomenon of fruit browning effectively.
