摘    要:0.002~5mmol/L水杨酸(Salicylicacid,SA)处理新红星苹果果肉圆片,可抑制圆片中乙烯合成酶(EFE)的活性;进一步研究表明SA处理可降低圆片中超氧阴离子(O2·)、Fe2+及Fe3+的含量,并且SA处理的果肉圆片中O2·、Fe2+及Fe3+含量水平的变化与EFE活性的变化有明显的正相关性。试验还探讨了O2·、Fe2+及Fe3+同EFE活性间的关系。研究认为SA降低O2·、Fe2+及Fe3+含量水平是它抑制EFE活性的重要原因。

Effects of Salicylic Acid (SA) on EFE Activity in Starkrimson Apples
Abstract:Ethylene forming enzyme (EFE)is one of key enzymes during ethylene biosynthesis.It is known that Salicylic acid(SA)could inhibit EFE activity,but its mechanism remains unknown.Effects of SA on superoxide anion radical(O 2· ),iron ion contents and the relationship between SA inhibiting EFE activity and O 2· ,iron ion contents in senescing fruits of Starkrimson apples were studied with fruit discs.The apple fruit discs were treated with different concentrations of SA.Re sults showed that SA inhibited the activity of EFE during the process of biosynthesis of ethylene in the fruits and decreased the contents of O 2· ,Fe 2+ ,Fe 3+ .The higher the concentration of SA was,the stronger it inhibited.The relationship between O 2· and EFE was studied by treating with Na 2 S 2 O 3 which produced O 2· .Results showed that O 2· could improve the ac tiv ity of EFE.Treatment of EDTA,DTPA,Fe 2+ and Fe 3+ respectively show that the activity of EFE have great relationship with con tents of Fe 2+ and Fe 3+ .Generally,the decrease of O 2· and iron ion contents were significant to the effect that SA inhib ited EFE activity.
