摘    要:针对水产品生物保鲜剂的作用机理,介绍了乳酸链球菌素、壳聚糖、鱼精蛋白、茶多酚,酶类等不同来源的生物保鲜剂及复合生物保鲜剂在水产品保鲜的应用现状及进展,提出了采用生物保鲜技术结合其他保鲜手段,将更加全面地保持水产品的品质,在水产品保鲜领域具有良好的应用前景。

Abstract:Based on the introduction of the function mechanism of aquatic bio-preservation, the article elaborated the current applications of chitosan, protamine, tea polyphenols, enzymes and other different resourced bio-preservatives in aquatic products. And the article proposed that bio -preservation technologies combined with other preservation methods would be applied widely to conserve aquatic products that it could maintain the quality of aquatic products, promising a good and bright prospect.
