茶叶中的硒成分分析

摘    要:采用硒75示踪研究了茶叶中的硒成分。结果表明,茶叶中的硒约80%属于硒蛋白质,其中除少量与色素、多酚、核酸和果胶呈结合状态外,其余绝大部分的硒蛋白均呈游离状态。硒蛋白中占硒总量21.91%的硒为硒代甲硫氨酸硒,无机硒仅占硒总量的8%左右。

Abstract:Selenium compositions in tea leaves were analysed with selenium 75tracing.Results showed that proteins and inorganic compositions were about80% and 8% of selenium in tea leaves(dry weight)respectively.Most ofthe selenium proteins were free,except the small amount of the combina-tions of pigments,polyphenols,pectin and nudeic acid.Of the selenium intea leaves,21.91% was in form of selenomethionine.
