酒糟对氧化应激肉鸡肉品质和抗氧化能力的影响

摘    要:为研究玉米酒糟及其可溶物(Distillers dried grains with solubles,DDGS)对地塞米松(Dexamethasone,DEX)诱导的应激肉鸡肉品质和抗氧化能力的影响。选用300只1日龄科宝500肉鸡,随机分为对照组和试验组,每处理6个重复,每重复25只肉鸡,其中,对照组饲喂基础日粮,试验组饲喂150g/kg DDGS日粮。22日龄时,再分为4个处理。处理1:饲喂基础日粮,第23天开始注射生理盐水;处理2:饲喂基础日粮,第23天开始注射DEX;处理3:饲喂150g/kg DDGS日粮,第23天开始注射生理盐水;处理4:饲喂150g/kg DDGS日粮,第23天开始注射DEX。DEX均为腹腔隔日注射3次,剂量为3mg/kg。结果表明,注射期DEX显著提高肉鸡腹脂率、肝脏指数、胸肌L*值及血清GSH-Px活性(P0.05);降低血清T-AOC活性和MDA浓度(P0.05)。DDGS显著增加胸肌失水率和L*值(P0.05),降低血清T-AOC活性(P0.05)。应激后,DEX显著提高肉鸡腹脂率并降低血清GSH-Px和T-AOC活性(P0.05)。DDGS组肉鸡血清T-AOC活性显著降低(P0.05)。结果提示,DEX成功诱导肉鸡氧化应激,日粮中添加DDGS未显著改善应激肉鸡肉品质。

Abstract:The purpose of this study is to investigate the effects of dexamethasone (DEX) and dietary distillers dried grains with solubles (DDGS) on meat quality and antioxidant capacity of broiler chickens. Three hundred 1 day old broiler chickens were randomly divided into control group and experimental group, and there were 6 replicates per group and 25 broilers per replicate. The control group was fed corn soybean meal basal diet, while the experimental group was fed the diet with 150 g/kg DDGS. The chickens were randomly divided into four treatments at 22 day of age. Treatment 1: basal diets, broiler injected saline from 23 d; treatment 2: basal diets, broiler injected DEX from 23 d;treatment 3: 150 g/kg DDGS, broiler injected saline from 23 d; treatment 4: 150 g/kg DDGS, injected DEX from 23 d. The injection dose 3 mg/kg was carried out for 3 times every other day at abdomen. The results indicated that during challenge, DEX treatment significantly increased abdominal fat percentage, liver index and L*(P<0.05), as well as serum GSH Px activity (P<0.05). However, DEX treatment significantly decreased serum T AOC activity and MDA content (P<0.05). Broiler chickens fed dietary DDGS had significantly higher water loss rate and L* (P<0.05), whereas lower serum T AOC activity (P<0.05). Post challenge, DEX significantly increased abdominal fat percentage (P<0.05), but significantly decreased GSH Px and T AOC of serum (P<0.05). Dietary DDGS significantly decreased serum T AOC activity (P<0.05). In conclusion, DEX may induce oxidative stress of broiler chickens; however, dietary DDGS did not improve meat quality of broilers under DEX induced stress significantly.
