摘    要:以自制的木薯淀粉为原料,采用正丁醇反复结晶法制备直链淀粉和支链淀粉样品,并对原淀粉和直、支链淀粉进行定性、定量测定。结果表明,利用酶解法对淀粉大分子进行酶解后,通过测定还原糖的含量可实现对淀粉各组分的定量测定,为木薯淀粉各组分的进一步分级与检测研究提供理论基础。

Abstract:Amylose and amylopectin were separated from cassava starch by Butanol recrystallization method, qualitative and quantitative determination of amylose and amylopectin were studied, too. The results showed that the content of amylose and amylopectin in cassava starch could be identified quantitatively by determining the content of reducing sugar after enzymatic hydrolysis. It provides theoretical basis for grading and determining of cassava starch components.
