绿茶桑椹醋饮料的研制及其减肥试验研究

摘    要:以桑椹醋、绿茶、冰糖和柠檬酸为原料,研制绿茶桑椹醋饮料,并对该饮料的减肥功能进行研究。通过正交试验,确定了绿茶桑椹醋饮料的配方,开发出了一种口味良好、具有一定保健功能的茶醋饮料;并通过动物试验研究了绿茶桑椹醋饮料的减肥降脂作用。结果表明,5 L茶醋饮料的最佳配方是绿茶50 g、桑椹醋360 mL、冰糖100 g、柠檬酸10 g;肥胖模型中试验组小鼠的生殖器周围脂肪总重、脂肪系数、血清总胆固醇和甘油三酯较对照组均显著下降(P<0.05),说明绿茶桑椹醋饮料具有明显的减肥降脂作用

Abstract:A new kind of health vinegar drink named Mulberry Vinegar Beverage mixed with Green-Tea(MVBGT)was processed.The processing conditions and formula of the drink with nice flavor and health-beneficial functions were determined by orthogonal test method.Meanwhile,to study the effects of the drink on reducing weight content,we set up rats nutritive obesity model.The results showed that the best formula of drink in 5 L was composed of 50 g of green-tea,360 mL of mulberry vinegar,100 g of crystal sugar,10 g of citric acid,and the content of TC,TG,HDL-C total fat weight reduced apparently compared with the normal control group(P<0.05),this proved that vinegar beverage had functional effects of reducing weight.
