人工养殖与野生云南光唇鱼肌肉的营养成分测定及比较

摘    要:为了解人工养殖云南光唇鱼的营养需求、饲料配制及鱼肉的加工利用提供参考,对人工养殖及野生云南光唇鱼肌肉的营养成分进行测定分析。结果表明:人工养殖云南光唇鱼肌肉中蛋白质含量为18.40%,显著(P0.05)高于野生云南光唇鱼;粗脂肪含量为0.80%,显著(P0.05)低于野生云南光唇鱼。两者的脂肪酸组成一致,人工养殖云南光唇鱼的不饱和脂肪酸总量(63.775%)显著(P0.05)低于野生云南光唇鱼(65.191%),多不饱和脂肪酸总量(30.93%)显著(P0.05)高于野生云南光唇鱼(14.06%);两者间饱和脂肪酸总量无显著差异(P0.05)。人工养殖和野生云南光唇鱼的氨基酸组成一致,均含有18种氨基酸,氨基酸总量分别为76.43%和73.30%,必需氨基酸总量分别为37.39%和34.43%,鲜味氨基酸总量分别为19.61%和19.81%,必需氨基酸总量/氨基酸总量分别为48.92%和46.97%,必需氨基酸总量/非必需氨基酸总量分别为95.77%和88.58%,必需氨基酸指数分别为75.01和70.63。云南光唇鱼经过驯化养殖及人工驯养的营养价值得到提高,更适合人体对氨基酸的需求。

Comparison of Nutrient Components in Muscles of Cultured and Wild Groups of Acrossocheilus yunnanensis
Abstract:The nutrient components in muscles of cultured and wild groups of A.yunnanensis were compared to provide scientific basis for its nutritional requirements, preparation of artificial diet and processing.Results: The crude protein in the muscle of cultured A.yunnanensis was 18.4%, significantly higher than that of the wild A.yunnanensis(P<0.05);The crude fat content was 0.8%, significantly lower than that of the wild A.yunnanensis(P<0.05).The fatty acids compositions of two groups were consistent.The ∑UFA of cultured A.yunnanensis was 63.775%, significant lower than that of the wild A.yunnanensis(P<0.05)while the ∑PUFA was significant higher than that of the wild A.yunnanensis(P<0.05).The amino acids compositions of two groups were consistent, including 18 kinds of amino acids.The∑TAA,∑EAA,delicious amino acid,∑EAA/∑TAA,∑EAA/∑NEAA and EAAI of cultured and wild A.yunnanensis were 76.43% and 73.3%, 37.39% and 34.43%, 19.61% and 19.81%, 48.92% and 46.97%, 95.77% and 88.58%, 75.01 and 70.63, respectively.By domesticated and cultured, the nutritional value of A.yunnanensis were higher, and more suitable for human needs of amino acids.
