摘    要:猪和牛等家畜的肺是其屠宰加工的主要副产物之一,具有较高的综合利用价值,不仅可作为烹制菜肴的食材,更可通过精深加工开发出酶类、蛋白、肽及糖类等应用于医药、化工和饲料制品等领域,如硫酸软骨素、肝素钠、转化酶、抑肽酶、组织凝血活酶、血管紧张素、糖胺聚糖等高附加值产品,对其在此领域的产品开发及技术研究进行了概述。

Abstract:The lungs of livestock such as pigs and cattle are one of the main by-products of their slaughtering and processing.Because it has a high comprehensive utilization value,it could be used not only as a cooking ingredient,but also as a pharmaceutical,chemical,and feed product like enzymes,proteins,peptides,and polysaccharide.Such as chondroitin sulfate,heparin sodium,invertase,trasylol,tissue thromboplastin,angiotensin,glycosaminoglycan and other products.This review provided an overview of product development and technical research in this area.
