摘    要:采用4种对比试验,研究羟乙基羧甲基壳聚糖(HECMCTS)对中华寿桃的保鲜效果.结果表明,处理2(HECMCTS PVC)保鲜效果最佳,证明HECMCTS能有效地抑制果实呼吸强度,延缓呼吸高峰期,减少果实水分损失,增强果实防腐抑菌能力并保持原有品质与风味.

Abstract:We have studied the fresh-keeping capability of hydroxyethyl carboxymethyl chitosan(HECMCTS) to the Zhonghuashou peach fruit by four kinds of contrast experiment. The fresh-keeping effect of Methord 2 is the best. The results evaluate HECMCTS can restrain the fruit's breath intensity and delay its breath peak. HECMCTS also can decrease the fruit's moisture loss, enhance its preservative capability and maintain its original quality and taste.
