恩施州主栽马铃薯块茎中还原糖及淀粉含量分析及评价

摘    要:对恩施州5个县(市)60个马铃薯样品中的还原糖和淀粉进行了测定、分析。结果表明,5个县(市)的马铃薯还原糖平均含量为0.16%~0.35%,淀粉平均含量为13.22%~15.48%,部分县(市)马铃薯还原糖和淀粉含量存在显著差异;由于马铃薯还原糖和淀粉含量不同而有不同的加工适宜性,薯片及全粉加工品种较丰富,优质淀粉加工品种少,建议加强淀粉加工型马铃薯优质品种的选育与推广。

Analysis and Evaluation of Reducing Sugar and Starch Content in Potato Tuber of Main Potato Cultivars in Enshi Autonomous Prefecture
Abstract:Reducing sugar and starch in 60 potato samples from 5 counties in Enshi autonomous prefecture was determined and analyzed. The results showed that the average reducing sugar content of potato samples from 5 countries ranged from 0.16% to 0.35%, and the average starch content ranged from 13.22% to 15.48%, potato from some countries showed obvious difference in the contents of reducing sugar and starch. Due to the different contents of reducing sugar and starch, there were different processing suitability, thus most of potato samples from Enshi were suitable for chip and entire flour processing, while little of them were suitable for starch processing. Therefore, it was suggested to enhance breeding and popularization of starch processing type potato varieties with high quality.
