长白山笃斯越橘红色素特性的研究

摘    要:探讨了长白山笃斯越橘冷冻果红色素的提取条件及外界因素对越橘色素稳定性的影响.结果表明:长白山笃斯越橘红色素乙醇溶液最大吸收峰的波长在526 nm处.长白山笃斯越橘色素易溶于乙醇等有机溶剂,不同提取液对色素的提取效果有一定的影响.越橘红色素的乙醇溶液呈深红色,澄清透明,丙酮溶液微溶,呈红褐色,有絮状物;最佳提取条件为85%的乙醇浸提3 h;越橘红色素在酸性条件下稳定,在碱性条件下变色;提取液不同越橘色素颜色变化也不同;低温加热越橘天然色素稳定性较高,但高温加热对色素有较强的降解作用;光照条件不同对越橘稳定性也有不同程度的影响.相对而言,长白山笃斯越橘红色素的稳定性要好于人工栽培的越橘.

Studies on Red Pigment of Vaccinium uliginosum in the Changbai Mountain

Abstract:We mainly studied on the extraction of red pigment from Vaccinium uliginosum frozen fruit,and the effect of the external factors on the stability of Blueberries pigment.Results showed the largest wave length of Vaccinium uliginosum pigment ethanol solution appeared at 526 nm.Changbai Mountain Vaccinium uliginosum pigment organic solvents was easier in ethanol,different extraction fluids may cause little impact on pigment extraction.The ethanol solution of scarlet Blueberries pigment was clarify,while the acetone solution slightly soluble with reddish-brown objects.Best conditions for the extraction were 85% ethanol soak for three hours.The Blueberries was stable in acidic condition,but the color changed in alkaline condition,the color changed when the extraction fluid changed.The stability of blueberries natural pigment was higher with low-temperature heating.High temperature heating will cause the pigment a strong degradation.The different illumination conditions made varying degrees of impact on the stability of Blueberries pigment.Relatively speaking,the stability of Vaccinium uliginosum in Changbaishang Mountain was much better than that of cultivated Blueberries.
