摘    要:利用荧光光谱检测技术,对维生素B2纯溶液及牛奶荧光光谱特性进行了详细的对比研究,解释了荧光光谱产生的原因以及对应的荧光团。牛奶在300~610nm波段内有较强的荧光光谱,其中500~600nm波段内是维生素B2产生的。分析了不同环境对牛奶中维生素B2含量的影响,结果发现,牛奶中维生素B2在酸性环境下较稳定;在碱性条件下不稳定,易被分解破坏;对光敏感,对温度不敏感。因此,牛奶要避光保存。

Effect of Different Treatments on the Content of Vitamin B2 in Milk by the Fluorescence Spectroscopy

Abstract:In this experiment,a comparative study on the detail fluorescence spectral characteristics of pure solution of vitamin B2 and milk was proceeded by the fluorescence spectrum detection technology,and the explanation for causes of fluorescence spectrum and corresponding fluorophore were also provided.For milk,the strong fluorescence spectrum was found in 300~610 nm band within which band of 500~600 nm was produced by vitamin B2.The influence of different environment factors with the content of vitamin B2 in the milk and the corresponding reasons were analyzed.Vitamin B2 is stable in acid in milk.In alkaline condition it is unstable,and easy to be decomposes.It is sensitive to light but not temperature.Therefore,the milk preservation should avoid the light.
