灭菌乳稳定性快速预判方法

摘    要:货架期对灭菌乳来说是一个非常重要的参数,然而目前缺少快速预判货架期内稳定性的方法.通过应用TURBISCAN稳定性分析仪分析灭菌乳样品,建立了一种快速检测灭菌乳稳定性的分析方法.结果表明:24 h内,当样品稳定动力学参数小于1.5时,保质期内稳定性预后较好,反之,则灭菌乳存在脂肪上浮严重的风险.经验证,该方法可以较好的评估货架期.

Abstract:Shelf life is a very important parameter of sterilized milk; however there is a lack of methods to predict its stability during shelf-life. In this paper, we analyzed sterilized milk samples using a TURBISCAN stability analyzer and proposed a rapid detection method for the stability of sterilized milk. The experimental results showed that for sterilized milk samples with a 24-h Turbiscan Stability Index (TSI) less than 1.5, the stability had a good prognosis during the shelf life of 6 months, whereas serious milk fat floating happened when the TSI was above 1.5. The method was validated to be able to better evaluate the shelf life of sterilized milk.
