| 摘 要： | 弱筋小麦是指用来制作饼干、蛋糕、糕点类食品的专用小麦,要求蛋白质和湿面筋含量低,筋力弱。与强筋小麦相比,河南省弱筋小麦的产业化发展水平明显滞后。本文分析了河南省弱筋小麦产业化发展现状、存在问题,并就今后的发展提出建议。从发展现状看,河南省研究、生产、加工弱筋麦的全产业链已初步形成,但在弱筋小麦品种选育、栽培技术、规模化生产、优质优价、精深加工等方面仍存在诸多问题。在分析现状和问题的基础上,借鉴河南省强筋小麦发展经验,提出加快河南省弱筋小麦发展的几点建议：加强品种选育、深入研究高产优质栽培技术、壮大弱筋小麦商品粮基地、加强弱筋粉加工利用研究、培养龙头企业等。

The problems and strategies for the industrialization of weak gluten wheat in Henan province |

| Abstract: | Weak gluten wheat is suitable for the produce of biscuite, cakes and Chinese southern steamed bread, required low content of protein and wet gluten in flour. Compared with strong gluten wheat, the industrialization of weak gluten wheat is stillSverySbackward in Henan province. In this paper, the current situation and problems were analyzed, and the strategy was put forward for weak gluten wheat industry in Henan province. From the view of development status, the whole industry chain of research, production and processing of weak gluten wheat in Henan province has been preliminarily formed. However, there are still many problems need to be solved in the breeding, cultivation, large-scale production, deep processing, economicSefficiency and so on. Based on the situation and problems of the industry of weak gluten wheat, and the experience of industrialization of strong gluten wheat, several suggestions was proposed to resolve the problems for industrialization of weak gluten wheat in Henan. We should strengthen the breeding of varieties, made of an intensive study of yield and quality cultivation technology, expand planting scale, enhance the study of processing and utilization, cultivate the corporate champion. |
