| 摘 要： | 目的]筛选出传统水提法提取当归多糖的最佳工艺及Savag’s法去蛋白时最佳操作次数。方法]运用正交设计法设计提取工艺；采用Savag’s法去蛋白，并比较不同次数对多糖含量的影响。总糖含量测定采用改良苯酚-硫酸法；蛋白质含量测定采用考马斯亮蓝法；糖醛酸含量测定采用硫酸-咔唑法。结果]提取的最佳工艺为：料水比1：20、提取时间30min、提取温度100℃；最佳去蛋白条件为：氯仿-正丁醇（5：1），操作3次。结论]该方法简便、易操作，适用于水溶性粗多糖的提取和检测。
