黑豆非酶促保护物质的抗氧化性分析

摘    要:以黑豆种子为材料,提取非酶促保护物质,并对其进行了抗氧化、抗衰老能力检测与分析。结果显示:黑豆皮红色素(17.3600%)对DPPH的清除率高达93.6000%,薯蓣皂苷(4.8492%)与谷胱甘肽(803.3μg/g)对DPPH与OH有明显的清除率,多糖(7.2270%)对O2-与OH的清除率分别为47.7100%与68.1600%,它们都随着其浓度的升高清除率逐渐增强;研究表明:黑豆富含非酶促保护物质,具有较强的抗氧化与抗衰老能力,可用来进行保健品、功能食品及药物的研制与开发。

Abstract:black bean seed as the material, non-enzymatic extraction of protective substances, and its anti-oxidation, anti-aging ability of detection and analysis. The results showed: black hull red pigment (17.360 0%) of DPPH scavenging rate of 93.6000%, diosgenin (4.849 2%) and glutathione (803.3 μg /g) on DPPH and OH scavenging rate significantly,polysaccharide (7.227 0%) of O 2- and OH scavenging rates were 47.710 0% and 68.1600%, they increased with its concentration gradually increased clearance rate; study: black beans are rich in non-enzymatic protective substances, has strong antioxidant and anti-aging capabilities, can be used for health products, functional food and drug research and development.
