食品中沙门氏菌能力验证样品的鉴定与分析

摘    要:目的]掌握食品中沙门氏菌能力验证中可疑菌落的分离及鉴定,分析食品中沙门氏菌检验过程中存在漏检的可能性及判定方法。方法]按照沙门氏菌能力验证作业指导书及GB 4789.4-2016《食品安全国家标准食品微生物学检验沙门氏菌检验》的要求对编号为224号、740号、845号3份能力验证考核样品进行沙门氏菌的检测。结果]3份样品中均检出沙门氏菌,其中224号样品中检出沙门氏菌双相亚利桑那亚种。结论]3份能力验证样品结果均为满意。

Identification and Analysis on Capability Verification of Salmonella in Food

Abstract:Objective]The aim of this study was to master the isolation and identification of suspected colonies in the capability verification of Salmonella in food,and analyze the possibility and determination method of missing detection in the inspection process of Salmonella in food.Method]According to the operation instruction of Salmonella capability verification and GB 4789.4-2016 National food safety standard Food microbiological examination:Salmonella,three capability verification samples numbered 224,740 and 845 were tested for Salmonella.Result]Salmonella was detected in all the three samples,among which the Salmonella biphasic Arizona subspecies were detected in 224 samples.Conclusion]The results of three samples were satisfactory.
