四川五个烟区烤烟挥发性香气成分比较分析

摘    要:研究四川5个烟区烤烟挥发性香气成分特点,利用GC-MS对各烟区烤烟挥发性香气成分进行分类分析并进行聚类,结果表明各地香气成分存在差异,烟区被分为三大类:Ⅰ类包括凉山和攀枝花,该类特点是新植二烯和类胡萝卜素类降解产物相对含量较低,类西柏烷类降解产物和美拉德反应产物相对含量较高;Ⅱ类包括泸州和宜宾,该类特点是新植二烯和类胡萝卜素类降解产物相对含量较高,类西柏烷类降解产物和美拉德反应产物相对含量较低;Ⅲ类包括广元,该类特点是新植二烯相对含量较低,其余成分相对含量较高。不同生态环境下烤烟香气风格可能跟烟叶中质体色素降解产物与其他香气成分的相对含量有关,通过构建合理的烟叶挥发性香气成分评价指标体系,有助于进行烟草种植科学区划。

Comparative Analysis of Volatile Aroma Components of Flue-cured Tobacco in 5 Production Regions of Sichuan Province
Abstract:In order to research the regional characteristics of volatile aroma components of flue-cured tobacco in different production regions, the methods of classification analysis and cluster analysis of the volatile aroma components were conducted by GC/MS. The results showed that there were differences in volatile aroma components among different production regions, and these regions could be divided into three types. The first type included Liangshan and Panzhihua, the characteristic of volatile aroma components in which was lower content of neoplytadiene and decomposable products of carotenoid, higher content of Maillard reaction products and decomposable products of cembranoids. The second type included Luzhou and Yibin, the characteristic of volatile aroma components in which was just the opposite of the first type. The third type included Guangyuan, the characteristic of volatile aroma components in which was lower content of neoplytadiene, but higher content of the others. The aromatic style of flue-cured tobacco in different environments may be related to the relative content of degradation products of plastid pigment and other volatile aroma components, thus, the establishment of rational evaluation indicator system of volatile aroma components of tobacco would be contribute to scientific planning regionalization of tobacco.
