生物保鲜剂在水产品保鲜中的应用

摘    要:生物保鲜剂是从动植物、微生物中提取或利用现代生物工程技术得到的保鲜剂,其安全、健康、高效等特点已成为人们关注的热点。本文阐述了生物保鲜剂和复合保鲜剂的定义、保鲜原理及特点。并从植物源性、动物源性、微生物源性、酶类分别介绍了典型生物保鲜剂的国内外应用现状。按照栅栏理论结合不同保鲜剂的特点,提出复合生物保鲜剂保鲜水产品,以及分析了生物保鲜剂与低温、气调保鲜结合的可行性。生物保鲜剂与其他保鲜技术结合,实现协同保鲜作用,将有效地延长水产品的货架期。
