| 摘 要： | 采用静态顶空气相色谱-质谱联用技术,研究了M26中间砧对泰山嘎拉果实挥发性成分和香味品质的影响。结果表明:采用M26中间砧嫁接显著提高了泰山嘎拉果实醛类、酯类和香气总量。M26中间砧嫁接泰山嘎拉果实中含有10种特征香气成分,分别为乙酸丁酯、乙酸-2-甲基丁酯、乙酸己酯、丙酸丁酯、丙酸己酯、丁酸乙酯、2-甲基丁酸乙酯、2-甲基丁酸丁酯、2-甲基丁酸己酯、己酸乙酯,未用M26中间砧(对照)嫁接的泰山嘎拉果实中含有11种特征香气成分,除上述10种成分外,还含有己醛。与对照相比,采用M26中间砧嫁接泰山嘎拉的果实中,乙酸-2-甲基丁酯、2-甲基丁酸乙酯、2-甲基丁酸丁酯、己酸乙酯等特征香气成分对数香气值显著升高,而己醛、丙酸己酯对数香气值显著降低,引起泰山嘎拉果实嗅感的变化。

| Abstract: | The effects of M26 interstock on volatile components and aroma quality in fruits of Taishan Gala were analyzed by headspace gas chromatography -mass spectrometry technology .The results showed that the contents of aldehydes , esters and total aroma components significantly increased in fruits of Taishan Gala graf-ted on M26 dwarfing interstock.Ten kinds of characteristic impact components （CICs） were determined in ap-ple fruits grafted on M26 interstock,including butyl acetate, 2-methylbutyl acetate, hexyl acetate, butyl pro-pionate , hexyl propionate , ethyl butyrate , ethyl 2-methylbutyrate , butyl 2-methylbutyrate , hexyl 2-meth-ylbutyrate and ethyl hexanoate .Eleven CICs including the above 10 components and hexanal were found in fruits of Taishan Gala without M26 dwarfing interstock （control）.Compared with the control, the logarithms of odour unit values of 2-methylbutyl acetate , ethyl 2-methylbutyrate , butyl 2-methylbutyrate and ethyl hex-anoate increased significantly , while those of hexanal and hexyl propionate decreased significantly , which caused the change of fruit smell sense . |
