摘    要:为了进一步科学掌握猴头菇的保健营养成分和药理作用功效,现对猴头菇中蛋白质含量进行了测定评价.结果表明:猴头菇鲜菇中蛋白质含量为4.63%,干菇为32.98%;经对干品中氨基酸含量测定,猴头菇含有18种氨基酸,人体必需的8种氨基酸齐全,赖氨酸含量与干枞菌相当;同时指出猴头菇营养价值高于动、植物蛋白,应加大食用开发力度,促进猴头菇产业的健康可持续发展.

Abstract:In order to further science know well health nutrition constituent and pharmacological effect of Hericium,the protein content of Hericium were determined and evaluated.The results showed that protein content of fresh mushroom obtained 4.63%,32.98% of dried mushrooms;by amino acids on the determination of dry goods,Hericium contains 18 amino acids,essential 8 amino acids complete,lysine content and very dry fir bacteria;that Hericium nutritional value than animal and plant protein consumption should be increased efforts to develop and promote healthy and sustainable development of Hericium industry.
