| 摘 要： | 为进一步改善上部烟叶质量和优化密集烘烤工艺,研究了密集烘烤干筋期不同温湿度对上部烟叶外观质量、化学成分、致香物质含量和感官评吸质量的影响.结果表明:干筋阶段的湿度状况对上部烟叶的外观质量和内在品质的形成有着重要的作用,适当提高干筋后期(60℃以后)湿度能够明显改善上部烟叶的烘烤质量,其中以处理T3(干球温度54～59....

| Abstract: | To improve quality of upper leaves of flue-cured tobacco and optimize curing technology,effects of different temperature and humidity on appearance quality,chemical components,content of aroma components,and smoking quality of upper flue-cured tobacco leaves were studied in the stem drying stage during bulk curing.The results showed that temperature and humility in stem-drying stage had an important influence on the formation of appearance quality and internal quality of upper leaves.Properly increasing humility in the later stem of drying stage(after 60 ℃) could greatly improve the quality of upper leaves,and the appearance quality,chemical components harmony and smoking quality of T3 treatment(dry bulb temperature 54 ℃~59.9 ℃,wet bulb temperature 38 ℃;dry bulb temperature 60 ℃ and after,wet bulb temperature 41 ℃) were obviously improved,and the content of main aroma components was significantly increased.T3 treatment also had the characteristics of preferable note,adequate aroma amount,clean aroma quality,little irritation,moderate density and strenth,less offensive taste and good taste.To a certain degree,T3 treatment improved the availability of upper leaves. |
