摘    要:阐述了高压脉冲电场杀菌系统的组成,介绍了高压脉冲电源的设计原理及食品处理室的结构,计算了能量密度,探讨了电场强度和处理时间与杀菌效果的关系。试验结果表明:在试验参数的条件下,细菌芽孢失活率达98%。

Abstract:The elementary compositions of a system for food pasteurization by using high voltage pulsed field was explained, the design principle of a high voltage pulsed field generator and the structure of the treatment chamber were introduced and the energy density was calculated in this paper. The inactivation experiments were carried out at three electric fields, 30,37, 40 kV/cm. The results showed that as the electric field intensity and treat time increased, the inactivation rate increased and 98% of spores were inactivated at electric field of 40 kV/cm for 3 6 ms. These results indicated that spores inactivation with high voltage pulsed field was possible.
