小麦品种籽粒氨基酸组成平衡性分析

摘    要:选用7个目前浙江省小麦主栽品种和8个优良亲本或地方品种,进行连续2年的籽粒蛋白质和氨基酸含量测定,旨在分析小麦籽粒蛋白质的营养价值,探索小麦品质改良的途径。结果表明,小麦籽粒蛋白质和氨基酸的含量在年度间存在较大差异,但其蛋白质和含量与7种(类)必需氨基酸含量,呈极显著正相关。供试品种的籽粒蛋白质中,必需氨基酸分配与人体对蛋白质中必需氨基酸需求欠平衡;赖氨酸和苏氨酸为小麦籽粒限制性氨基酸。提高这种2必需氨基酸的含量,促进蛋白质中各种(类)氨基酸组成比例的平衡,必然能增进小麦粒籽蛋白质的营养价值。

Abstract:15 wheat cultivars were tested on protein and amino acid contents in 2 successiveyears in Zhejiang Academy of Agricultural Sciences.The purpose of this exprimentis to analy the nutritive value of wheat protein and to find out the ways of impr-ovement of wheat quality.The results of these studies may be summarized as follows:The protein and 7essential amino acid contents of 15 wheat cultivars are different in 2 years,butpositive significant correlations are found between protein content and 7 essentialamino acid contents in seeds of the wheat cultivars.The nutritive values of wheatprotein in different varities are not same because of the different ratioes of essentialamino acids in the protein.Lysine and threonine are limiting amino acids in wheatprotein.It is necessary to raise the two amino acids in wheat protein in order toimprove wheat quality.
