摘    要:海产品中长链n-3PUFA对大脑发育和认知功能是非常重要的。研究表明,常规消耗或饮食补充长链n-3PUFA可预防心血管病和炎症反应。因此,添加有长链脂肪酸的食物在满足人类理想健康状况下具有非常重要的作用。作为食物脂肪来源的海产品中,其长链n-3PUFA含量低于饱和脂肪酸、单不饱和脂肪酸及n-6PUFA,但增加包含海产品长链n-3PUFA的摄入量是预防慢性病的一种有效的方法。因此有必要增加饮食中长链n-3PUFA含量并使他们的利用率达到最优。本文主要对食品中添加海产品长链n-3PUFA,长链n-3PUFA满足人类日常需求的作用以及功能性食品的重要性进行详细的综述。
